So after stuffing myself with an amazing burrito last night I woke up this morning with a food hangover. Therefore, I wanted something light and fresh for breakfast. Part of my diet requires me to have two table spoons of oat bran per day and as recommended in the Dukan Diet that making galettes with the oat bran is a great way to enjoy it.
So since I love lemon or anything citrus, I attempted to make a lemon galette and to my surprise they turned out amazingly delicious. These beautiful airy pillows of tart lemon definitely helped get over my food hangover.
The ingredients I used:
- 2 tbsp of oat bran
- 2 tbsp of light ricotta
- 1 egg
- 2 sweetener packets (splenda)
- 1/2 tsp of lemon zest
- juice from half a lemon
- 1 tsp of vanilla extract
- 1/2 tsp of unsweetened shredded coconut
So first I cracked the egg in a bowl and beat it with a wire wisk. It’s most important to beat the egg until frothy as this will make the galette very light and airy. I then added the vanilla, sweetener, lemon juice and lemon zest giving it another good wisk. Finally adding the remaining ingredients and mixing it well.
I revised this recipe by adding light ricotta instead of fromage frais. I also added the coconut and vanilla. I prefer to make the galettes in 2 inch coins as it makes it easier to flip when making them in the pan. Drop them on a lightly oiled pan at medium heat. Once bubbled up flip them over until golden brown.
After making these and enjoying them with plain yogurt mixed with lemon juice, I thought of an additional ingredient that I think would go great with the lemon flavour…. ground ginger. Will have to try it next time I make these delicious blankets of lemony goodness.
